A Taste of Christmas

Today I am featuring another one of my Holiday cupcake flavors that I recently introduced!

I asked for input on flavors and had many wonderful suggestions!  The first, the Gingerbread Treat, has been a big hit!

With this one, I am taking things in a different direction. This is not a spice cake, as so many holiday cakes are.

I have found that with this flavor,  there are 2 sides people generally belong to....  
those who cannot get enough and would immediately drive through Starbucks for its companion, and those who prefer spice cakes for Christmas.

This cupcake is called Peppermint Cocoa!
Just imagine a yummy, larger version of a Peppermint Patty!  Now, pair it with a cup of hot chocolate and you have reached perfection!

It is a moist chocolate cupcake.  It has a rich peppermint buttercream frosting, and is topped with crumbled candy canes.

 It is a mouthful of Christmas joy!

Holiday Time!

A few weeks ago I asked for input about holiday flavors and received several great suggestions!
So, I immediately got to work making some holiday flavors that I would be proud to put my name on.

Today I am going to introduce the first of my Holiday Collection.

It is rich and yummy and goes amazingly with a cup of coffee.

This is a Gingerbread cupcake, full of spices and other goodness.  It has a cinnamon, cream cheese frosting and is topped with a cinnamon dust.

I have determined that this cupcake is yummy enough to be consumed as breakfast as well.....
Why not!?

Apple Crisp

Welcome to fall, everyone!

How exciting it is this time of year!  The weather is pretty, the leaves are changing, and the holidays are right around the corner!

I love it!

I also love all the flavors that come with the fall and the holiday season.

We have gotten lots of feedback with our fall flavors so far!  The Pumpkin Spice and the Sweet Potato have both been a big hit.

So, here is another one!  I personally think this may become one of my favorites!
(I know, I have said that before, right?!) Seriously, this one is just divine!

This is a cupcake that is unique in the sense that you will probably want to eat it with a fork.  As the name suggests, it has some delicious, crisp crumbly parts that could end up in your lap if you aren't careful, and let me just tell you that you won't want to waste a single bite!

This is a flavorful Apple Crisp cupcake, baked with freshly chopped Granny Smith apples, with a honey and cinnamon buttercream frosting, topped with a light dusting of cinnamon.

We're Mobile!

Yep, that's right!

You all know that we deliver, but now we are mobile in more ways than one!

We are so excited about the newest addition to our family.

Meet Miss Blue Belle.

Isn't she pretty!!  We flew to Raleigh, NC on September 10th to pick her up and drive her home.   
At that time she was naked, except for her paint.
After that we spent a busy three weeks getting her clean, installing shelving, putting in the baking rack, and getting her graphics applied.

Finally, around the first part of October, she was ready to roll!
So, we loaded her up with lots of goodies and set out to bring cupcakes to the world.

Not only do we deliver, but we are officially a part of the Food Truck craze that has taken over Nashville!
We have not been mobile all that long, but so far it has been such a wonderful journey!  We have met some fantastic people, received some priceless feedback, and had lots of fun!

I have to give a big shout out to my husband for doing such a wonderful job and being so supportive.  He has been right there with me, giving me directions when I didn't know what direction to go, creating some fabulous and unique flavors, and naturally taking care of the labor-intense portion by getting things installed and working properly.  Thank you, babe.

And here is my partner in crime. 

Most people call her Mom.  
My kids call her "Dear".

She is Okay with either.  So be sure to say hello to Mom next time you stop by! She will greet you with a smile.

We are so excited about our new adventures.  Being a part of the Nashville Food Truck community has also been an exciting journey.  They are all such wonderful people with a talent for creating delicious food on the go. 

I have been blessed to serve alongside several of the many food trucks now rolling around Nashville, and have tasted something from all those I have encountered.
Let me just tell you they are all fabulous!!

I also want to thank all those I have met and had the pleasure of serving so far!  You are all a blessing to me and I have loved every minute of it!

Starry Night!

Today's featured flavor is simply dreamy...

Remember art class when you learned all the great artists and what they painted? 

One of the most memorable was "Starry Night" by Vincent Van Gogh.  It was also one of my favorites.

It is just beautiful, like something from a dream.

This was the inspiration for this cupcake!

This is a moist blue velvet cupcake with a rich cream cheese frosting, topped with a gold star and blue sprinkles...

It is yummy and beautiful all wrapped into one!

Simple Vanilla

It has been a few days since I was able to post a Featured Flavor.
Sometimes life just gets crazy and I turn around and realize I am behind.  So Sorry about that!

I wanted to have a follow-up with my featured flavor to last week's "This N That Thursday" post to tell you about our Simple Vanilla.

This is truly a cupcake that can suit everyone's taste.
It is, as the name states, simple.

This is a Madagascar Bourbon Vanilla cupcake with a vanilla buttercream frosting, topped with a candy flower.

However, it does not have to be that simple!
When placing your order, you are welcome to specify a wide range of topping choices!  
You might want to add some chocolate syrup, or caramel drizzle, candy sprinkles, or possibly even some crumbled peanuts.

So, simple or not, this cupcake is simply good!

This N That Thursday! - Toppings...

Toppings, toppings, we all love toppings!

Ok, I love toppings.
On my food, on my sweets, on my coffee...

Seriously, why have something plain when you can add toppings?

Isn't hot coffee better with a little whipped cream floating around on top!?  Well, yeah!

What would yummy Japanese food be without soy sauce or those little seed things you sprinkle on top (forgive me please for not remembering the name...)!

Don't even get me started on having Mexican food without sour cream and good Pico de gallo!

It is no wonder places like Marble Slab, Maggie Moo's, etc. are so popular.  They let you choose from a whole bar of toppings!

Doesn't matter if it is peanuts, gummy bears, or Oreos.
Personally, I can do without the gummy bears, but my kids like them.
To each his own, right?

For me, I love Magic Shell, chocolate flavor.
Yes, I know.  I am a full grown adult. This is a rare thing that i will admit, but there it is. I just love it.

So, sue me.

My husband likes that crunchy granola cereal.  Seems like he will add it to just about anything.  Yogurt, ice cream, oatmeal.... I could go on and on.  
That is OK.  It makes him happy.

You have probably noticed that I like a variety on my cupcakes, too.
If a request is made for something plain I am happy to do it.

At the same time, I like to offer a variety of options for those out there who like a choice.

For instance: The Simple Vanilla is pretty much just that.  A Simple vanilla cupcake with vanilla buttercream frosting.  Some folks like it just how it is.

However, if peanuts are your favorite let me know.  You can get it with peanuts on top.  
Or maybe chocolate syrup?
Or Caramel drizzle..... with peanuts?

Just imagine the possiblities!

This N That Thursday - Game Day!

** Update ** 
I had several requests to post the recipe for the Bacon Tomato Cups.  So, here you go!

8 slices bacon            1 Tomato, chopped
1/2 onion, chopped    3 oz. shredded swiss cheese
1/2 cup mayonnaise    1 tsp. dried basil
1 (16oz) can regrigerated buttermilk Grands biscuits

Preheat your oven to 375.
Lightly grease a mini muffin pan.
In a skillet over medium heat, cook bacon until evenly brown.  Drain on paper towels.
Crumble bacon into a medium mixing bowl and mix with tomato, onion, swiss cheese, mayonnaise, and basil.
Seperate biscuits into halves horizontally.  Place each half into cups of the prepared mini muffin pan.
Fill each biscuit half full with the bacon mixture.
Bake for 10-12 minutes, or until golden brown.

Now, go and enjoy!  These things are awesome!!!

So, it is time for This N That Thursday!
I have really enjoyed getting to read all of your responses to this! Your ideas and recommendations are priceless.

So, with it being this close to the weekend my kids are already fired up.  Plus, it is leaning closer to fall, which means one thing for the boys.
Football season!

This includes my husband! I don't know about anyone else, but the boys of my house go into serious withdrawals after the Super Bowl. 
So, by the time school starts, they can hardly control their excitement.  We are very fortunate to live next door to our kids' school, so Friday night High School football games are a regular for us.  No worries about traffic or parking, we just walk on over. (Go Wildcats!)

What is one thing that goes hand in hand with watching football?
Yep! Food!
I love all the snacks and creative hors d'oeuvres that people come up with.

Last year a good friend of mine made something called "Bacon, Tomato Cups."  Let me tell you, they were amazingly, addictively good!  Probably very fattening, but worth every bite! 
She had put Grands biscuit dough into a mini muffin pan, then loaded it with a combination of cheese, bacon, sour cream, etc. and baked it.  It was almost like a little mini-quiche (without the eggs.)  Yum!  Love ya Pam!

So, tell me your famous (or favorite) Game Day food! Do you load up on fried food, or sweets, or both?

Key Lime

This is by far my most popular flavor.  

It is also my absolute favorite!

All my life I have been a fan of key lime pie.  Not just any key lime, but the really tart and tangy key lime.

I remember many years ago, in my days as a flight attendant, I would over-night in a variety of cities and therefore have the opportunity to try a variety of foods all over the country.

There are two things I would look for when I had the chance while eating in the various cities I visited.
  1. A great Steak
  2. A great Key Lime Pie

It was no great surprise that I found one of the greatest steaks in El Paso, Texas.  However, I was utterly shocked to find the BEST Key Lime pie I had ever tasted in Tulsa, Oklahoma!
That's right.  
Tulsa.  Who knew.
Not Florida. Theirs was too sweet.

So, long story short, this cupcake reminds me of that awesome Key Lime Pie.  I never imagined I could get a cupcake to have that same flavor, but Wow.... it does!

This is a light and fluffy key lime cupcake.  It has a tangy key lime frosting, topped with graham cracker crumbs and fresh lime zest.
It just doesn't get any better than this!!!

Lemon Blossom

Alright, I have to admit that this ranks up there with the Key Lime in my book!

Obviously, I love the tangy, citrus flavor of these cupcakes. 

As a friend of mine described it recently "It's 'slap your mama' Good"!

This is a fluffy and moist lemon cupcake, with a tangy lemon buttercream frosting.  It is topped with graham cracker crumbs and fresh lemon zest.

It is perfectly tart and tangy, yet has just enough sweet to satisfy your sweet tooth.

The trouble with this one..... you can't eat just one!

Today's featured flavor is, by far, my husband's favorite.  

It is one of those classic cakes that you don't have all that often, but when you do you want it done right.

I never imagined that a cake made out of, and named after, a vegetable would be so delicious.  
I guess it is right up there with pumpkin.  As a child, if you had told me I would be devouring a pumpkin cupcake 30 years later, and scraping up every last crumb, I would have laughed in your face.  Well, the same is true for carrot.

Who knew!?  It's pretty dog-gone good. 

So, back to my point: everyone loves a good carrot cake.  This is not a dessert that you can walk into the grocery store and buy (unless you prefer your desserts to taste like cardboard.)

This cupcake is loaded with goodness.  Freshly chopped carrots, pecans, pineapple, and more.  Then, it is topped with a rich cream cheese frosting and sprinkled with chopped pecans.

It doesn't get any more "down home" than this.

It's that time again!

With yesterday's talk about fall and the holidays hurdling toward us, it got me thinking.
For today's "This N That" post I want to know your favorite holiday sweets!

Better than that, are there any you would like to see transformed into a cupcake....

Interesting, huh?  Let's not go down the road of the fruit cake though, that would be shameful.

Seriously, is it a German chocolate and coconut, or possibly some sort of spice cake?

For me, I am thinking maybe a chocolate with a peppermint frosting or a rich spice cake with a cream cheese frosting.  Maybe even a pumpkin cupcake......

Fall is probably one of my favorite times of the year.
After the heat of the summer finally gives way to cooler temperatures, we move into the official "Holiday Season", which lasts from now until the New Year.

It is such a fun and exciting time of year! Every year there are camping trips, cookouts, Halloween, hay rides, High School Football games, and more.

It is so much fun to sit with the kids, and good friends around a camp fire. They always want to hear spooky stories.
And they ALWAYS want S'mores!

So, this was my inspiration for this cupcake.  I love S'mores, probably as much as my kids do!  They are fun to eat, and just plain yummy! In my opinion, they are a necessity for every event we have in the fall.  However, it's hard to have a campfire everywhere you go.  Some places just are not conducive to fire.....  Hence, having a S'mores cupcake instead!

This cupcake is one of those wonders, in that it is amazing how much it really does taste the way it should according to its name.  When you bite into this, it is surprising how much it tastes like you are eating S'mores!

It is a moist chocolate cupcake with a graham cracker crust.  It has a marshmallow frosting, topped with graham cracker crumbs and a piece of Hershey's chocolate.

It is truly a treat for the kid in all of us!!

This one is probably fairly easy to figure out. It is one of those flavors that people have requested of me.  

My mom was one of them.
So, how could I not fill that request?

This is a moist chocolate cupcake with a dark chocolate ganache frosting topped with a "Mountain Top" of shredded coconut.

Pretty isn't it?

It's delicious too!

True Love!

There is one thing that most women can agree on. That is a love of chocolate.

No matter what happens to us in a day, chocolate can usually make things right again.
At least for me it can.

Granted, there are a small percentage that don't care for it, like my little sis.  Sorry Kim.  You are in the minority here, but you know this already and it's Okay.  

We love ya anyway.

This n' That Thursday!

Well, it's Thursday so it is time for the This 'n' That!

Today I would like to find out everyone's flavor combinations. 
There are so many, it is lot like Sonic where you can pick your flavor.

The point is, some people prefer a simple white cupcake with a basic buttercream frosting.  Others may prefer something more complicated on their vanilla to mix up the taste!

You get the idea!  I want your feedback.  If you had to choose any combination, what would it be?

Maybe an orange cupcake with a vanilla frosting?
Maybe a blueberry cupcake with cream cheese?

I am always looking to try new and different combinations and I want to do what works for you!

As for me, for starters I love this cupcake I made yesterday when I was spending some time with my mom.  I might like to change up the flavors a bit, but I love how the the sparkle pink turned out on the frosting.  It almost looked too pretty to eat!

I am also anxious to try a raspberry cupcake with a champagne buttercream.  
 I am gonna have to work on this one very soon! Doesn't that just sound heavenly!?

The Salty Dog!

Have you ever had one of those days when you couldn't decide whether you were craving something salty or something sweet?

I certainly have!  I think it is a natural human condition; to love something salty but then to want something sweet also. It's probably why the candy companies have done so well selling the pretzels covered in chocolate.

Well, with this cupcake you won't have to choose!  What better than to combine the salty with the sweet?

I have to be honest.  When I first thought about this cupcake, which is my husband's creation, I was not prepared to be impressed.  Even though he did pretty well creating the Maple Bacon, which is delicious, it never occurred to me that this creation could be such a hit.  So, I bit my lip and let him create.  I am so glad I did!

Wow.  Yep, that is all I can say.  Wow! Wow! Wow!

It is beyond good!!  The Salty Dog is now among my TOP PICKS!  In fact, to make sure I was not dreaming, I passed out some initial samples.  My wonderful neighbors are usually happy to oblige a taste test, and are always very honest.
Aside from the ooohs and aaahhhs, they were fighting over the last bite!

This is a brown sugar cupcake with a (local) Honey and Caramel frosting.  It is topped with a caramel drizzle and just a dash of the secret ingredient......

Can you guess what it is?
Let me give you a hint:
This cupcake is called The Salty Dog....
Yep, that's right!  It has small hints of course Sea Salt!  It may sound strange, but this is something you will have to see (actually, taste) to believe! 

To top it off, when I tell you the honey in this recipe is local, that is true!  My husband is a beekeeper, so the honey used in this recipe came straight out of the bee hives he tends.  It just doesn't get any better than that!

The Cupcake Rule....

So, we have another featured flavor coming later today but in the meantime I wanted to give out a very important tip!

No one likes to eat dry or stale cake, right?  Right!

If you want to keep your cupcakes fresh, you have to follow a few simple rules.
Now, if you are one of those that inhales your cupcake the minute you buy it you can stop reading.... this will not apply to you.

However!  When you purchase a dozen and plan on saving some for later, this will be critical!

There is one major factor that causes dry, stale cupcakes: AIR.
Yep, just leaving your cupcakes sitting out will cause them to become stale very quickly.  Even when they are in the cake boxes we put them in for delivery.
Since I want to give you the ability to enjoy your cupcakes for a couple of days after buying them, you will need to remember this.
The BEST thing you can do when you get your cupcakes home is to store them appropriately.   A cake dome is best, but any container that seals and keeps the air out will work.  

This will allow them to stay moist and tasty for much longer.  Although, I would obviously recommend eating them within a day or two when they are most fresh!  
If you are buying cupcakes for a party or event, you could store them in a dome or plastic container when you get home and then transfer them back to the box before taking them to your event.

The other important thing to remember is this: Do NOT refrigerate!!  
The cold air of the refrigerator accelerates the drying process.
I know it is instinct for most people (myself included) to stick something in the fridge to save it for later. 
But for cupcakes, or any variety of cake you make at home, you can save your fridge space for the milk!

Birthdays are the most popular reasons that people come to us for special orders.

They are so easy to serve, there is nothing to carve, and everyone gets the same size! 

We offer these in a couple of different varieties.

This is a chocolate cupcake with a simple vanilla buttercream frosting and rainbow sprinkles. 
We can also do this with a vanilla cupcake, depending on your preference.  Both are awesome!

It is perfect for the kid in all of us!

Red Velvet

Well, what can I say?  A Red Velvet cake is the bees knees.  It is the one that should be on everyone's menu.  Period.

So, a Red Velvet cupcake is even better!  It is the perfect size for a delectable treat.  It is smooth, yummy, dreamy, and creamy.....  It's ALL THAT.

This is a rich Red Velvet cupcake with a smooth cream cheese frosting, topped with baked red velvet crumbs.

Mmmmmm... Mocha!

Another great food combination in our history happened when someone decided to add a little chocolate to their coffee. 
Or, maybe they added a little coffee to their chocolate???

Who knows!  Who cares? Either way, it was BRILLIANT!

Coffee is a staple in my life, much like PB&J is to my son. 
Chocolate is something I love! 
So, putting the two together is just a little slice of heaven for me!  For that reason, this is one of my favorite cupcake flavors!

This is a yummy milk chocolate cupcake with a mocha frosting, topped with gourmet dark chocolate shavings and a dark chocolate candy. 

What better pick-me-up is there!?

The Ballerina

Every little girl like a little something pink.
Well, some like a lot of something pink, myself included!

So, whether you are a little girl of 6, 16, or 46 this cupcake is for you!

This is a light, fluffy, white cupcake with pink buttercream rosettes, topped with just a little bit of sparkle.  A dozen of them will give you an entire garden of sweet treats on your table!

These are perfect for a ballet recital or to serve at the next princess birthday party!

Chocolate, Peanut Butter

What a glorious combination!  
When the good folks at Reese's developed the peanut butter cup, a whole new taste was brought to life!

I have always wondered who originally came up with the idea to combine peanut butter with chocolate.  Whoever it was deserves some sort of award!  

Every Halloween, Easter, Christmas, (all the holidays in which candy is passed out) my husband and I can't help but raid the kids' buckets in hopes that someone passed out the "good stuff"!  The Reese's candy is always the first to disappear!

This cupcake is for the serious Reese's fan!  It is a Valrhona chocolate cupcake, with Reese's peanut butter chips baked into it.  It is then topped with peanut butter frosting and Reese's candy chunks, with a slice of a Reese's cup on top.

Going to Graceland!

As you may have guessed by the name, the flavor of the day was inspired by the one and only Elvis Presley!

Seriously, who doesn't love Elvis?
I LOVE Elvis.

If you know anything about Elvis, you are probably aware that he LOVED to eat peanut butter and banana sandwiches.  It was his absolute favorite.  
So, when I came across this recipe from my little sister, who is also an Elvis fan, I felt it was only right to name it after him!  We are in Tennessee, after all.

This is a very moist banana cupcake, filled with freshly chopped bananas.  It has a peanut butter frosting, topped with crumbled peanuts.

It will leave you wanting more!

A Man's Cupcake!

This cupcake was completely inspired and created by my husband.  
He was helping me decide on which recipes to try first and decided he wanted to make a cupcake that even a guy would get excited about.

So, being the man that he is, he did some research before coming to me and saying "Just wait until you taste what I am going to make!  It has BACON!"

I must admit that I was hesitant, immediately saying "What!?"  Then, "you can't put bacon in a cupcake!"

I stand corrected.

His creation came from various places.  Some muffin recipes he liked, combined with similar cupcakes he found online and elsewhere.  He tried it a couple of different ways before finding the mixture that was "just right."

Oh man.  It was just right!  Not just that, it is delicious!  It is truly a "Man's Cupcake".

This is a maple cupcake, made with 100% dark maple syrup and little bites of crumbled bacon.  It is topped with a cream cheese frosting, also infused with maple syrup and a slice of candied bacon.  

Yes, you read that right.  The bacon on top has been candied.  The perfect combination of salty and sweet, it completely melts in your mouth!

This is perfect in the morning with a cup of coffee!  It is a cupcake, without being overly sweet. What better for a morning office meeting?

Cookies and Cream

Today's flavor I am going to tell you about is our Cookies and Cream cupcake.

This is so simple in its design, yet so delicious. 

There are few things my kids love more than cupcakes and Oreos.  
So, to put the two together just sends them over the edge!

This is a moist devil's food cupcake with a light buttercream frosting, topped with a ton of crumbled Oreos.

When I began creating my menu, my children were the among the initial "taste-testers".

Why we are different!

This is probably the most important question I could answer.  At Dixie Belle's we strive to be the best in more ways than one.  There is nothing worse than choosing to buy a product and receiving bad customer service, a lousy product, or worse: both!
What is the most important thing about Dixie Belle's Gourmet Cupcakes that makes us different from any other?  Let me tell you!

1. We have made it our goal to provide the BEST customer service possible!  If you have chosen to buy from Dixie Belle's we want to ensure that you are completely satisfied.  In fact, we guarantee it!  We will go over and above to make sure our customers know how much we appreciate them!

2. As a part of our customer service we feel that you should not have to come to us, we will come to you!  There is nothing convenient about ordering cupcakes for your Friday office meetings if you have to drive across town in traffic to pick them up!  Just tell us when you would like them delivered and we will meet you at the door. 

Have you ever been in the middle of cleaning or decorating for your child's birthday party when you realized that you had not scheduled yourself enough time to drive to the bakery and pick up the cupcakes before they close?  Take one more stress out of your life and let us bring the cupcakes to you!

3. What good would all the customer service be if we did not have a product we could stand behind?  We make all of our cupcakes from scratch, using only the finest ingredients.  We have spent a lot of time testing to be sure that our recipes produce the most delicious cupcakes.  Some are old family recipes, others are a combination of old recipes with a little "tweak" here and there.
For instance, most grocery store chains and even some local bakeries do not make their own frosting!  Most places order buttercream in a 5 gallon bucket, never attempting to make the flavor their own.  At Dixie Belle's we make all our own frosting from scratch, in a variety of ways depending on the flavor we are striving to achieve.  Nothing ever comes from a bucket!
  One difference I should tell you about when I mention using the finest ingredients is the specialty cocoa and vanilla we use in our recipes.  As you can guess, we do not use a store brand!
  Valrhona cocoa powder is the best you can get!  Feel free to browse their website, read their history and you will know why we chose their product.


  Madagascar bourbon vanilla is the best you can get!  Again, I have attached a website where you can see the benefits of this product in our baking.

4. Finally, what truly makes Dixie Belle's different is our love of what we are doing!!  We have put our heart and soul into providing our customers with the best cupcakes and the best service.  You can't, and shouldn't, expect to get one without the other.

Welcome to Dixie Belle's

Today, I am going to begin by showing you one of our standard favorites.  It has been very popular for baby showers.  It is called the ""It's a Boy" or "It's a Girl" cupcakes.  Pictured below is the Girl cupcake (for reasons that are pretty obvious...)

These are available in 2 flavor choices, both come with a sweet buttercream frosting and candy pearls.
  1. Vanilla - Madagascar bourbon vanilla cupcake
  2. Chocolate - Light chocolate cupcake made with Valrhona cocoa
