It's a FRENZY!

People in the Donelson, Hermitage, and Mt. Juliet areas have been asking me for quite some time when there will be more food trucks in this area.  
Up until now it was mostly just me and the cupcake truck, with the exception of a few other trucks who came out this way on occasion.

So, I have been on the hunt for a good place to host a gathering of trucks, in order to feed all these folks, who are anxious for a little variety!
After some work and searching I have done it!

If you are somewhat familiar with the Hermitage area, you probably know the intersection of Lebanon Pike and Old Hickory Blvd.  It is a very large intersection!  There is a Hobby Lobby and Big Lots on one corner, and on the other corner (up on the hill) sits the Hermitage Church of Christ (in the big white building.)

Well, the church has a lower parking lot, which is visible from Lebanon Pike.  It is a big open space, with plenty of parking.  (step one... check!)

This church also has a food pantry, which gives out food, clothes, etc. on a daily basis to those in need.  (GREAT cause.... check!)

I approached the managers and individuals in charge with the proposition of utilizing their lower parking lot for a gathering of food trucks.  They were happy to have us! (check!)

In return, the trucks will give 10% of their proceeds to help the food pantry!

So, the Hermitage Food Truck Frenzy is born!

The first event will take place Wednesday, March 7th from 11am until 2pm!  If it is a success, we have been given permission to make it a weekly event!  

This is so exciting for this area!  We are so excited that we have been able to make it happen!
Just imagine, different trucks each week with a variety of different foods, with a portion of the proceeds going to a great cause!
Make sure to mark you calendars for Wednesdays, and tell all your friends where they can go that day for lunch.
There will also be bins set up, where you  may bring food items to donate.  Their food pantry is always in need of food, so anything you drop off will be appreciated.

The first week's lineup will include:
Hoss' Loaded Burgers
Rollin and Smokin BBQ
YaYo's OMG (Original Mexican Gourmet)
and us!

It's gonna be great, don't miss it!

Happy Sweets Day!

Well, February is now upon us!  That means it is time to get your plans underway for that sappy holiday!   Seems like it should be called Happy Sweets Day, it gives us the perfect excuse to indulge!

Anyway, it is hard to believe that Valentine's Day is right around the corner!  But, it will be here before you know it.

Now guys, you know your wife or girlfriend is expecting a little something, right?

It doesn't have to be big and expensive like cars and jewelry!  Most girls just like to know you put some thought into it!  Honestly, it's the little things that make us happy!
If everyone else around us is receiving reminders from their sweethearts, we need to know we are loved, too!

And ladies, your man is expecting a little attention too.  Even if he doesn't come out and say it, he really loves you to pamper him with something special.   I have found through experience, that the way to a man's heart is definitely through his stomach!

So today's featured flavors are made with that in mind.
The first is a flavor I introduced last year called True Love.  The name says it all!

This is for the love of your life who adores chocolate, almost as much as you!  It is a rich chocolate cupcake topped with a dark chocolate Ganache and a little candy heart. 

Next up is a new flavor, fresh from the oven!  I have several fans out there who just don't care for the sweetness of traditional frosting.  So, I was determined I would create a cupcake that was light enough for the pickier of the sweet eaters.

You may have had a birthday cake from a grocery store or bakery that was made with a whipped type frosting, rather than buttercream or cream cheese.  This has been a popular selection for some people because it isn't quite as sweet and it holds up well in the warmer temperatures.
However!  Have you noticed how is usually takes like the wax from a melted candle with a touch of sugar added?  Yuck!!
I think the idea behind this frosting was to come up with something that tastes more like whipped cream.  The problem with that, is they were not very successful (just my humble opinion, but then again I like the sweet stuff!).

See, as you can imagine, whipped cream does not hold up well outside of the refrigerator.  So, frosting made to imitate whipped cream, especially when it is mass produced for grocery stores to be shipped and stored long term, will not last.  So, apparently changes were made to solve those problems..... I just don't want to know what they are!

Now don't go and get offended, I know there are people who enjoy this variety.  I am simply not one of them.  That is OK.

So, what I chose to do is a little homework!  I decided to find a way to make a light, whipped frosting that is fresh and tasty, but can pile up on a cupcake without sliding off.  (Have you ever tried to make whipped cream hold it's shape for more than a few minutes?  This was challenging!)

Eventually, I discovered several recipes that address this very issue.  After playing with it, and tweaking it to taste, I came up with my own recipe for a whipped frosting!
Let me tell you, it is perfection!

So, what better way to introduce it, than a traditional, light and sweet treat!
Strawberry Shortcake!

Yep, this is a moist yellow cupcake.  It has my new whipped cream frosting, and is topped with a fresh strawberry slice!
